Ingredients

  • 2 ripe bananas mashed
  • 1 egg
  • ¼ cup natural peanut butter
  • 1 tsp vanilla extract
  • ½ cup almond milk or any milk
  • 1 cup rolled oats
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 2 tbsp honey or maple syrup
  • 1 cup blueberries fresh or frozen

Instructions

  • Preheat oven to 350°F (180°C) and line an 8×8 baking dish with baking paper.
  • In a mixing bowl, whisk together the mashed banana, egg, peanut butter, vanilla, almond milk, and honey.
  • Stir in the oats, cinnamon, and baking powder until combined.
  • Fold in blueberries gently so they don’t burst too much.
  • Spread the batter evenly into the baking dish and bake for 30 minutes, or until golden and set in the middle.
  • Let cool fully in the pan before slicing into bars.
