Ingredients
- 2 ripe bananas mashed
- 1 egg
- ¼ cup natural peanut butter
- 1 tsp vanilla extract
- ½ cup almond milk or any milk
- 1 cup rolled oats
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 2 tbsp honey or maple syrup
- 1 cup blueberries fresh or frozen
Instructions
- Preheat oven to 350°F (180°C) and line an 8×8 baking dish with baking paper.
- In a mixing bowl, whisk together the mashed banana, egg, peanut butter, vanilla, almond milk, and honey.
- Stir in the oats, cinnamon, and baking powder until combined.
- Fold in blueberries gently so they don’t burst too much.
- Spread the batter evenly into the baking dish and bake for 30 minutes, or until golden and set in the middle.
- Let cool fully in the pan before slicing into bars.
Notes
